Spicy Pepper Steak Recipe

A great stir-fry style recipe that is prepared in the microwave. This recipe is a must for all stir-fry lovers.
 
Ingredients
  1 1/2  lbs beef chuck or round steak, trimmed.  
    Marinade:  
  1/3  cup soy sauce  
  1   clove garlic, minced or  
  1  tsp ground ginger  
  1  tsp paprika  
  1/3  cup salad oil, divided  
  1 1/2  cups sliced red, green and/or yellow pepper  
  1  cup finely sliced celery  
  1  cup sliced green onion  
  1  tbsp Cornstarch  
  3/4  cup water  
    Salt and pepper to taste  
  1  cup diced fresh tomatoes  
 
Instructions
 
  Tip: This pepper steak is perfect for microwaving. After marinating, beef has a nice brown color, no browning agent is needed.

 
  1. Cut the beef across the grain into strips.

 
  2. Mix marinade and combine well. Pour marinade over beef strips in bowl. Mariante at room temperature for at least 30 minutes

 
  3. Add remaining oil to a microsafe browning dish or other microwave safe cooking dish. Preheat oil at HIGH power for about 1 minute.

 
  4. Strain beef and reserve marinade. Add beef strips to oil.

 
  5. Microwave, uncovered, at HIGH power for about 3 minutes. Add 1/4 cup water, bell peppers and celery. Stir to blend.

 
  6. Microwave, covered at MEDIUM power for 6 minutes. Remove from oven. Stir well.

 
  7. Microwave at MEDIUM power for another 4 to 5 minutes. Add onions. Stir well.

 
  8. Mix cornstarch and 1/2 cup water. Add to beef mixture, stirring to coat beef and vegetables.

 
  9. Microwave, uncovered at HIGH power for about 3 minutes, stirring once during cooking time. Add tomatoes.
Microwave for another minute at HIGH power until dish is heated through. Add salt and pepper to taste.
