Strawberries au Gratin Recipe

Ingredients
  1  pound strawberries -- sliced  
  1/2  cup heavy cream  
  2   egg yolks  
  1/4  cup sugar  
  1/2  cup Gloria Ferrer Champagne Caves Blancs de Noirs (* see note)  
 
Instructions
 
  1. Lightly oil a quiche dish. Arrange strawberries in the dish. Set aside.

 
  2. In a bowl, beat cream until soft peaks form. Set aside.

 
  3. In the top of a double-boiler, whisk egg yolks and sugar together. Add the wine slowly, whisking constantly. Cook over simmering water, whisking constantly, until the mixture doubles in volume. Remove from heat and fold in whipped cream.

 
  4. Preheat broiler.

 
  5. Spread egg & cream mixture evenly over strawberries.

 
  6. Place entire dish under the broiler to barely brown the top, take care that it does not burn. Serve immediately.

 
  * NOTE: A favorite sparkling wine or champagne can be substituted
