Chester's Garlic-Sage Soup Recipe

Ingredients
  3  large onions -- sliced  
  20  cloves Creole Red garlic -- minced (*see note)  
    salt and pepper -- to taste  
  6  small Yukon Gold potatoes -- peeled and diced  
  3  cups water  
  8  cups beef stock  
  1/2  cup milk or cream  
  1  cup fresh lemon sage leaves -- chopped  
  1/2  cup fresh Italian parsley -- chopped  
 
Instructions
 
  1. In a skillet, sauté the onions in the butter. Add the garlic and sauté for 5 more minutes. Add salt and pepper.

 
  2. Transfer to a food processor, add the remaining ingredients, and puree, adding warm water as necessary.

 
  * You can substitute ordinary garlic. Or better yet, contact Chester and order some of his Creole Red garlic.
