Taskebab Recipe

Yield: 5 Servings
 
Ingredients
  1  lb Diced beef  
    Olive oil  
  1   Eggplant, peeled and diced  
  3  c Light tomato sauce  
  1/2  sm Onion, diced  
  1/4  ts Basil  
  1/4  ts Oregano  
    Salt and pepper to taste  
 
Instructions
 
  1. Fry beef and eggplant in oil in skillet (or eggplant may be deep- fried). Prepare light tomato sauce. Combine with remaining ingredients. bake, uncovered, on low heat about 45 minutes, as for stew, to allow sauce to blend through meat and eggplant. Serves 4 to 5.
