Splenda Old Fashioned Blueberry Muffins Recipe

Yield: 10 muffins
Blueberry muffins made with Splenda.
 
Ingredients
  2  cups all-purpose flour  
  2  tsps. baking powder  
  3/4  tsp. salt  
  1/2  cup (1 stick) light margarine, softened  
  1  cup Splenda sweetener  
  1/4  cup honey  
  2   large eggs  
  1  tsp. vanilla  
  1/2  cup skim milk  
  1  cup blueberries, fresh or frozen  
 
Instructions
 
  1. Preheat oven to 350 degrees.

 
  2. Line 10 muffin cups with paper liners

 
  3. Sift together flour until light and fluffy.

 
  4. Add eggs one at a time beating well after each addition.

 
  5. Stir in vanilla. Alternately stir in flour mixture and milk, beginning and ending with flour mixture.

 
  6. Fold in berries.

 
  7. Spoon batter into muffin cups.

 
  8. Bake 25-30 minutes or until toothpick comes out clean.

 
  9. Cool in pan 10 minutes on wire rack. Remove muffins from pan. Cool completely on wire rack.

 
  Serving Size: 1 muffin
