A family favorite rice dish. Easy to make and very filling.
Ingredients
1/4 lb
Bacon - about 6 strips, cut into small pieces (about 1/2 inch square)
2 tbsp
Vegetable oil
1 ea
Onion, chopped
2 ea
Celery stalks, chopped
1/4 cup
Tomato paste
1/2 tsp
Dried thyme
3 cups
Water
1 can
(19 oz) Pigeon peas, drained
2 cups
Rice
Salt, pepper and hot sauce to taste
Instructions

Using a large sauce pan, cook the bacon until it begins to crisp. Add the oil, chopped onion and celery and cook until softened.

Stir in the tomato paste, hot sauce and thyme, then simmer for 5 minutes.

Add water, peas and salt and pepper to taste then bring to a boil. Add the rice, cover and cook over medium heat for 20 minutes or until rice is tender and the liquid is absorbed.
This keeps very well in the refridgerator for a couple of days. Simply re-heat in the microwave and serve.
