Fry the bacon in a large skillet over medium-high heat until very crisp. Cook in batches, pouring off excess fat as necessary. Drain the cooked bacon on two layers of paper towels.

Combine the sugar, allspice, pepper and water in a small bowl.

Drain the skillet of all fat; return the bacon to the pan. Drizzel the sugar-spice mixture over the bacon, tossing to coat. Cook over medium high heat for 3 minutes, tossing often.

Turn out onto a wax paper-lined baking sheet, separate the pieces with two forks. Keep warm in a 250F oven until ready to serve.
