Pan Fried Scallops and Potatoes Recipe

Yield: 2 servings
 
Ingredients
  2  tablespoons olive oil, divided in half  
  1/2  pound red potatoes, cut into 1/4-inch dice  
  1/2  pound bay scallops  
  1  clove garlic, peeled and minced  
  1  tablespoon lemon juice  
  1  tablespoon chopped fresh Italian parsley  
  1/8  teaspoon salt  
  1/8  teaspoon ground black pepper  
 
Instructions
 
  1. Heat half the olive oil in a large sauté pan over medium-high heat. Add potatoes and stir to coat. Fry potatoes, stirring frequently, for 10 minutes until golden brown. Remove with a slotted spoon and set aside.

 
  2. Add remaining oil to pan and reduce heat to medium. Add scallops and cook, stirring frequently, for 3 minutes. Add garlic and continue cooking 1 more minute.

 
  3. Add reserved potatoes, lemon juice and parsley; stir to heat thoroughly. Season with salt and pepper, serve immediately.
