Heat half the olive oil in a large sauté pan over medium-high heat. Add potatoes and stir to coat. Fry potatoes, stirring frequently, for 10 minutes until golden brown. Remove with a slotted spoon and set aside.

Add remaining oil to pan and reduce heat to medium. Add scallops and cook, stirring frequently, for 3 minutes. Add garlic and continue cooking 1 more minute.

Add reserved potatoes, lemon juice and parsley; stir to heat thoroughly. Season with salt and pepper, serve immediately.
