Orange-Oatmeal Muffins Recipe

Yield: 10 muffins
 
Ingredients
    1 cup all-purpose flour  
    1 tablespoon baking powder  
    1/2 teaspoon salt  
    1 cup quick-cooking oats  
    1/4 cup sugar  
    1 large egg, lightly beaten  
    1 tablespoon grated orange rind  
    1/2 cup fresh orange juice  
    1/4 cup fat-free milk  
    2 tablespoons vegetable oil  
    Vegetable cooking spray  
    2 tablespoons sugar  
    1/2 teaspoon grated orange rind  
    1/4 teaspoon ground cinnamon  
 
Instructions
 
  1. COMBINE all-purpose flour, baking powder, salt, oats, and 1/4 cup sugar in a large bowl; make a well in center of the flour mixture.

 
  2. STIR together egg, 1 tablespoon grated orange rind, and next 3 ingredients. Add to flour mixture, stirring just until moistened.

 
  3. SPOON batter into muffin pans coated with cooking spray, filling three-fourths full.

 
  4. STIR together 2 tablespoons sugar, 1/2 teaspoon grated orange rind, and ground cinnamon until blended.

 
  5. SPRINKLE mixture evenly over tops of muffins.

 
  6. BAKE at 400 for 15 minutes or until muffins are lightly browned. Remove muffins from pans immediately, and cool on a wire rack.
