Microwaved Baked Potatoes With Salsa Recipe

Ingredients
  1  lg Potato; scrubbed  
    Topping options:  
  1/2  c Salsa; * see note

  Preparation Time: 0:09

 
  If you don't have a microwave oven, cook the potatoes in a conventional oven at 350 degrees for 1 1/2 hours the night before, and serve them cold for breakfast.

 
  1. Puncture the potatoes several times with a fork and place in the microwave. Cook on high for 7 to 8 minutes, depending on the size of the potato and the number of potatoes cooked, or until tender. Eat plain or with your choice of toppings.
