Mary Lee's Easy Muffins Recipe

Yield: 12-16 muffins
 
Ingredients
  2  cups Aunt Jemima® Pancake Mix*  
  1/2  cup granulated sugar  
  1/2  tsp table salt  
  1  cup sweet milk (not low fat)  
  1   egg, beaten  
  1  tsp Pure Vanilla Extract  
  1/3  cup melted butter  
    * If you can't find, use 2 cups White Lily or Martha White Flour or try www.netgrocer.com for the Pancake Mix above.  
 
Instructions

  1. Preheat oven to 400F degrees.

 
  2. Line muffin tins with paper cups or grease lightly.

 
  3. Mix dry ingredients. Add milk, egg, melted butter, Vanilla Extract. Combine VERY gently, just wetting ingredients slightly. Don't over-mix or muffins will be heavy. Bake about 17 minutes or until light golden brown.

 
  May add 1 or 1 1/2 mashed bananas, apple sauce or 3/4 cup blueberries.

 
  Makes about 16 muffins if fruit is added.

 
  Great eaten FRESH, warm and buttered!
