Lemon Tarts Recipe

Ingredients
  1/2  cup margarine  
  2  cups sugar  
  6  large eggs  
  1/4  cup flour  
  3/4  cup sugar  
  2/3  cup lemon juice  
  1  tbsp lemon peel, grated  
  1  each pie shell dough  
  1/8  tsp ground nutmeg  
 
Instructions
 
  1. Cream 1/2 cup margarine; gradually add 2 cups sugar, beating well. Add 6 eggs, one at a time, beating well after each addition.

 
  2. Combine 1/4 cup flour and 3/4 cup sugar; add to the creamed mixture alternately with 2/3 cup lemon juice, beginning and ending with the flour mixture. Stir in 1 tablespoon grated lemon peel.

 
  3. Form 1 pie shell dough into 3" tarts and sprinkle lightly with 1/8 teaspoon nutmeg. Divide the filling among the tarts.

 
  4. Place the tarts on an ungreased baking sheet and bake at 350 degrees for 15 to 20 minutes, or until lightly browned.
