Italian Baked Fish Recipe

This variation on a classic Italian dish is ideal to prepare ahead. The cracked olives, flavored with garlic and chili, add real richness. This Italian Passover baked recipe gains zest and flavor from anchovy fillets in the cavity. This baked snapper recipe will work with any kind of fish, and is perfect for a special occasion.
 
Ingredients
  1   4 5-ounce orange roughy fillets, or walleye or flounder  
  1   1/3 cup pitted olives, drained and coursely chopped  
  1   1 28-ounce can Italian plum tomatoes, drained and chopped (preferably no-salt)  
  1   3 tablespoons chopped Italian parsley  
  1   2 tablespoons chopped fresh basil  
  1   2 tablespoons balsamic vinegar  
  1   2 garlic cloves, minced  
  1   Freshly ground pepper to taste  
 
Instructions
 
  1. Preheat oven to 375*F

 
  2. Coat a shallow 3-quart baking dish with nonstick canola spray. Place the fillets in a single layer in the dish.

 
  3. In a small mixing bowl, combine the remaining ingredients and spoon over the fillets.

 
  4. Bake for 25 minutes, or until the fish flakes easily when testes with a fork. Serve.
