Horchata Recipe

Ingredients
  Plain:  
  1  cup uncooked white rice  
  2+1/4  cup boiling water  
  1/4  cup to 1 cup sugar (to taste)  
  1  tsp vanilla (optional)  
  4  cups cold water  
  Variations:  
    Chocolate - add 2 oz chocolate to step 4  
    Strawberry - add a 10 oz pkg frozen strawberries to step 4  
    Cinnamon - add 1-2 sticks of cinnamon to step 2  
    Almond/Cinnamon - add 1 stick cinnamon and 1/2 c. blanched almonds to step 2  
    Lime - 3 1-inch strips of lime peel to step 2  
    Lemon - add the juice of one to step 6  
 
Instructions
 
  1. Ground the rice to a fine dust in food processor.

 
  2. In a medium-size bowl, pour boiling water over rice. Let sit for 6-8 hours.

 
  3. Pour rice mixture into a blender for about 6 minutes or until no longer gritty.

 
  4. Add 2 c. water to blender in 1/2 c. increments.

 
  5. Strain with either or mesh colander until as many solids as possible is removed.

 
  6. Add the rest of the water and sweeten to taste.

 
  7. Chill in fridge or serve immediately over rice.
