Heartland Apple Cake Recipe

Ingredients
  3  Cups all purpose flour  
  1  teaspoon Baking Soda  
  1  teaspoon Ground Cinnamon  
  1/2  teaspoon Salt  
  3   Eggs  
  2  Cups Sugar  
  1 1/2  Cups Vegetable Oil  
  3  Cups diced, peeled apples (2-3 Medium Apples)  
  1  Cup Flaked Coconut  
  1  Cup Chopped, toasted Walnuts  
  2  teaspoons Vanilla  
  1  jar (10 oz) Maraschino Cherries, drained and chopped (3/4 cup)  
  1  package (8 oz) Chopped Dates  
    Powdered Sugar  
 
Instructions
 
  1. Heat oven to 325.

 
  2. Grease bottom and side of Angel Food cake pan (Tube pan), 10 X 4 inches, or a 12 cup Bundt pan, with cooking spray. Lightly flour.

 
  3. Mix flour, baking soda, cinnamon and salt; set aside.

 
  4. Beat eggs in large bowl for about 1 minute. Gradually beat in sugar until well blended. Beat in oil until well blended. Gradually beat in flour mixture, beating after every addition until smooth.

 
  5. Stir in apples, coconut, walnuts, vanilla, cherries and dates. Spoon into pan; spread evenly.

 
  6. Bake 1 hour 15 minutes or until toothpick inserted into center comes out clean. Cool slightly in pan then remove to a wire rack to cool completely. Sprinkle with powdered sugar.

 
  Store loosely covered.
