Yield: Serves 4
Real Simple. Serve the tomato salsa over or alongside the tuna. Prepare next time you have guest coming home and trust me this version of a fresh tomato salsa over grilled fish is fantastic.

Ingredients
  1   3/4 cup Basic Vinaigrette
1   Zest of 1 lemon, grated
  1   1 clove garlic, minced
  1   2 tsp dried oregano
1   4 fresh tuna steaks, about 1/2 lb each
1   2 tomatoes, seeded and diced
  1   2 T capers, roughly chopped
1   1 cup roughly chopped arugula

Instructions

  1. Whisk together the vinaigrette, lemon zest, garlic and oregano in a medium bowl. Arrange the tuna steaks in a shallow baking dish and pour 1/2 cup of the mixture over them.

  2. Turn the tuna to coat, then cover and refrigerate for 1 hour. Heat the grill to high or a grill pan to medium-high.

  3. Grill about 4 minutes per side for medium-rare, depending on the heat level. Meanwhile, pour the remaining 1/4 cup of vinaigrette over the tomatoes, capers, and argula and toss. Serve the tomato salsa over or alongside the tuna.
