Ginger-Poached Pears with Ginger-Honey Crème Anglaise Recipe

Bosc or Anjou pears work best for poaching. They should be ripe but still firm. Because pear color varies by variety, color is not a good indication of ripeness. To test for ripeness, press gently near the stem; it should yield slightly.
 
Ingredients
  Creme Anglaise  
  1/2  cup whipping cream  
  1/2  cup whole milk  
  3  each fresh ginger slices (1/4-inch)  
  3  med egg yolks, room temperature  
  1/4  cup honey  
    Pears
