Fruit-Turkey Kabobs Recipe

This is a great use for any larger portions of left over turkey you may have after those holiday feasts. It's a great departure from the usual seasonal fair.
 
Ingredients
  3/4  lb cooked boneless turkey, cut into 1 inch pieces  
  1   orange, cut into wedges  
  1   pear, cut into wedges  
  1   green pepper, cut into wedges  
  4  small spiced crab apples  
  1/2  cup apricot preserves  
  1/4  cup light corn syrup  
  2  tbsp butter or margarine  
  1/4  tsp ground cinnamon  
    Dash ground cloves  
 
Instructions
 
  1. Thread pieces of turkey, orange, pear, green pepper and a crab apple onto four 8 to 10 inch skewers.

 
  2. Combine remaining ingredients in saucepan. Bring to a boil, stirring occasionally. Brush sauce over turkey and fruit.

 
  3. Place on grill and cook about 4 inches from coals, turning and brushing with sauce until meat and fruit are heated and well glazed.

 
  4. Serve on hot cooked rice with remaining sauce.
