Preheat oven to 350 degrees.

Mix all of the meatloaf ingredients together in a large bowl, kneading to make sure all the ingredients blend evenly.

Add more or less breadcrumbs as needed to create a firm texture to the meat so that it will hold it's shape. Be careful not to add too much or it will be dry. Use ketchup if you need more liquid.

Turn the meat out of the bowl into a 9x12 baking pan.

Pat the meat firmly to reduce cracking.

Press it into a loaf shape, smoothing the meat on top and sides to give it a uniform appearance.

Bake until meat is thoroughly cooked, about 30-45 mins.

While the meat is cooking, combine the topping ingredients in a small bowl and mix until smooth.

Remove the meat from the oven, and spoon the topping over the meatloaf, and place back in the oven.

Cook for an additional 5 or 10 minutes.
|

Remove from oven and with a spatula, carefully remove the meatloaf from the pan and place on a serving platter. Allow to cool slightly before slicing.
