Chili crusted Scallops with pickled ginger and wasabi mayo Recipe

Yield: serves 4 ppl.
 
Ingredients
  16 l   g. dry scallops, rinced before cooking  
  4  Tbsp Cajun spice mix (found in most stores)  
  4  Tbsp powdered ginger  
  4  tsp Cinnamon  
  4  tsp Curry powder  
    Salt and black pepper to taste  
    Olive Oil, for saute'ing  
  16   roses of pickled ginger  
  8  tsp wasabi mayo  
 
Instructions
 
  1. Dust Scallops with spice mixture, set aside. Heat a non stick saute' pan until smoking. Add Olive oil, and sear scallops until crispy on both top and bottom. Finish in a 350 degree oven to required doneness. To serve, place scallops on a plate, garnish with ginger and wasabi. Optional presentation...place gingered cole slaw in center of plate, scallops around the edge, garnish the same way.
