Chicken and Apple Skillet Recipe

A great combination of fresh chicken and tar apples make a delightful dish!
 
Ingredients
  1/4  cup butter  
  1  each large tart apples, peeled, sliced 1/2 inch thick  
  4  each boneless chicken breast halves  
  1/2  tsp salt  
  1/4  tsp freshly ground black pepper  
  1  each onion, large, coarsely chopped  
  2/3  cup dry white wine or apple cider  
  1/3  cup whipping cream  
  2  tsp fresh tarragon, chopped (1 tsp dried)  
 
Instructions
 
  1. Melt butter in large skillet over medium heat. Add apples; cook 3 minutes or until apples are tender, turning once. Place apples on plate.

 
  2. Sprinkle chicken with salt and pepper. Increase heat to medium-high. Add chicken and onion to same skillet. Cook 5 minutes or until chicken is golden, turning once. Return apples to skillet.

 
  3. Add wine; reduce heat to low. Cover and cook 5 to 8 minutes or until chicken is no longer pink in center and juices run clear. Place chicken, apples and onion on serving platter.

 
  4. To same skillet, add cream and tarragon. Bring to a boil over high heat, scraping up browned bits from bottom of skillet. Cook 2 to 3 minutes, stirring occasionally, until sauce is slightly thickened. Pour over chicken.

 
  PER SERVING: 380 calories, 21.5 g total fat (12 g saturated fat), 27.5 g protein, 19 g carbohydrate, 120 mg cholesterol, 440 mg sodium, 2.5 g fiber
