Chicken Curry - Sri Lankan Style Recipe

Ingredients
  500  g Chicken Thighs/Drum Sticks  
  3/4  cup Coconut Cream  
  1/2  cup Water  
  1/2   Onion - Chopped  
  1  tsp Raw Curry Powder  
  3/4  tsp Roasted Curry Powder  
  1  to 2 tsp Chili Powder (according to preference)  
  1/4  tsp Turmeric  
  4-5   Curry Leaves  
  1/2  inch Lemon Grass  
  1  inch Pandan Leaf  
  3  cloves Garlic - Chopped  
  2   Cardamoms - Crushed  
  2   Cloves - Crushed  
  2  tsp Red Wine Vinegar  
  2  to 4 tbsp Oil  
 
Instructions
 
  1. Wash the chicken. Mix the 2 curry powders, Chillie powder, Turmeric, Salt Cardamoms & cloves with a little oil & Vinegar & make a paste. Marinate the chicken with this paste for about 15 minutes.

 
  2. Heat 2 tbsp of oil in a saucepan. When heated, add the chopped Onion & Garlic & fry till light golden. Add the marinated Chicken & lower the heat. Let the chick fry in it's own for 2 minutes stiring to make sure it doesn't get burnt.

 
  3. Add the Coconut cream, Water, Curry leaves, Pandan leaf, Lemon grass & stir well. Let cook for about 10-15 minutes.

 
  This is a delicious Sri Lankan Chicken curry. You can skip the Pandan leaf & the curry leaves if it's difficult to find. Add a 1 more Garlic clove & 1or 2 more cardamoms. Trust me, you will love this.
