Chef Newmans' Avocado Pasta Sauce Recipe

This is an award winig sauce that is on several major web sites, try it for yourself. Preparation / Cooking Time: 30-45 minutes.
 
Ingredients

  1   • 1 ripe medium avocado  
  1   • 1 ripe large avocado  
  1   • 4 cups of heavy cream  
  1   • 1 large ripe tomato  
  1   • 2 ripe tomatillos  
  1   • 1 small sweet onion  
  1   • 1 clove roasted garlic  
  1   • 1 yellow bell pepper  
  1   • 3 Tbs. Olive oil  
  1   • 1/2 cup of finely grated fontina or pepper jack cheese  
  1   • sea salt  
  1   • pepper  
 
Instructions

  2. 1. In a blender mix 4 cups of cream and large avocado, blend until smooth.

 
  3. 2. In a large frying pan add 2 Tbs. olive oil heat on medium for 6 to 8 minutes.

 
  4. 3. Add small sweet onion (medium diced) and roasted garlic clove, stir around in oil until caramelized (golden brown).

 
  5. 4. Then add cream and avocado mixture, stir and reduce mixture until you reach desired thickness.

 
  6. 5. Add a pinch or two of sea salt and pepper (to taste).

 
  7. 6. Then lower temperature to low and stir in grated pepperjack cheese until smooth and creamy.

 
  8. 7. In a separate frying pan add 1 Tbs. olive oil heat on medium for 6 to 8 minutes.

 
  9. 8. Then add tomato, tomatillos, yellow bell pepper (medium diced) stir and cook just briefly to warm the inside of the vegetables (1 to 3 minutes).

 
  10. 9. Dice medium avocado, then pour sauce mixture over your favorite pasta toss and sprinkle with warm vegetables and avocado!

 
  11. 10. Grate a little fresh parmesan cheese on top if desired and enjoy!!!!
