Chai sponge cake Recipe

A unique and spicy tea cake passed by generations of my family.
 
Ingredients
  1   1/4 cup milk  
  1   1/4 cup concentrated chai tea(steep 6 bags of tea in 3/4 cup hot water for 2 hours)  
  1   1/4 cup melted butter  
  1   1/4 cup cocoa powder  
  1   6 egg yolks  
  1   6 whole eggs  
  1   1 1/2 cups sugar  
  1   1 1/2 cups of flour  
  1   icing or powdered sugar (optional)  
 
Instructions
 
  1. Place milk, tea, butter, and cocoa powder in a sauce pan and bring to a quick boil. set aside.

 
  2. Pour eggs and sugar into medium bowl posistioned in a larger, shallow bowl of warm water.

 
  3. Beat thoroughly until warm. with an electric mixer, whip until tripled in volume. Cool for about 5 minutes.

 
  4. Fold in both flour and cocoa mixture. grease and flour dust a 12" x 18" baking pan and spread batter evenly.

 
  5. Bake in 375 oven for about 10-12 minutes or until center is dry. Place on a cooling rack. Icing is optional, or dust with powdered sugar before serving.
