Caramel Dumplings Recipe

This is Grandma Dorvis Livingston's famous caramel dumpling recipe, exactly as she made them. Do not subsitute margarine for the butter in this recipe.
 
Ingredients
  Dumpling batter:  
  1 1/2  cups flour  
  1/2  cup sugar  
  1 1/2  tsp baking powder  
  1/2  tsp salt  
  1/2  cup milk  
  1  tbsp melted butter  
  Caramel Sauce:  
  1 1/2  cups sugar  
  2  cups boiling water  
  1 1/2  tsp vanilla  
  2  tbsp butter  
 
Instructions
 
  1. Mix all ingredients for the dumplings until flour is moistened. Set aside.

 
  For the caramel sauce:

 
  2. Put the sugar in a heavy skillet over medium high heat.

 
  3. Stir constantly until the sugar melts and turns a light brown. Carefully stir in the water. Be extremely careful while doing this as the water mixed with the liquid sugar will splatter and will burn you.

 
  4. When you add the water to the sugar some of the sugar will clump back together. Continue to stir until the sugar completely dissolves. Add butter and vanilla, bring back to boil and boil for 2 minutes.

 
  5. Drop in the dumpling dough by teaspoons.

 
  6. Lower heat, cover tightly, and cook for 15 minutes. Best served warm with whipped cream, ice cream, heavy cream or plain.

 
  TIP:I will sometimes double the amount of the sauce only as we like to have a lot of the caramel sauce on the dumplings.
