Barley Basil Pilaf Recipe

This pilaf recipe uses pearl barley seasoned with cinnamon, basil and nutmeg
 
Ingredients
  2  ts Vegetable Oil  
  1  c Pear Barley Uncooked  
  2  c Chicken Broth  
  1/2  ts Salt  
  1/3  c Minced Fresh Cinnamon  
    Basil OR Plain Basil  
  1/4  c Thinly Sliced Green Onions  
  1/8  ts Ground Nutmeg  
 
Instructions
 
  1. Heat oil in a 1 quart saucepan over medium heat just until hot, not smoking. Add barley & cook 5 min. Or until browned, stirring constantly. Add chicken broth & salt, bring to a boil. Cover & reduce heat & simmer 30 min. Or until barley is tender and liquid is absorbed. Remove from heat. Stir in basil, green onions & nutmeg.
