Baked Blueberry Pudding Recipe

A great dessert recipe. Best made when blueberries are in season. Frozen berries will work but gives a completely different texture than fresh ones.
 
Ingredients
  2  cups plain flour  
  1  tbsp baking powder  
    pinch of salt  
  1/3  cup butter or margarine at room temperature  
  3/4  cup caster sugar  
  1   egg  
  1  cup milk  
  1/2  tsp grated lemon rind  
  8  oz blueberries  
  1  cup icing sugar  
  2  tbsp fresh lemon juice  
    cream or ice cream to serve  
 
Instructions
 
  1. preheat oven to 180 C/350 F. Grease a large baking pan. Sift together the flour, baking powder and salt into a bowl.

 
  2. Beat the butter or margarine with the caster sugar in a large bowl, until light and fluffy. Beat in the egg and milk, then fold in the flour mixture, mixing well until evenly blended. Stir in the lemon rind

 
  3. Spread half of the mixture into the prepared baking dish. Sprinkle with half the blueberries. Top with the remaining mixture and sprinkle with the rest of the blueberies. Bake for 35-45 minutes, until golden brown and a skewer inserted in the center comes out clean.

 
  4. Mix the icing sugar gradually into the lemon juice to make a smooth icing of pourable consistancy. Drizzle the icing over the top of the warm pudding. Serve the pudding warm with cream or ice cream.
