Bailey's Irish Cream Cheesecake Recipe

Ingredients
  1  pk GRAHAM CRACKER CRUMBS,  
    -crushed  
  1/3  c SUGAR  
  4  tb BUTTER  
    CAKE  
  2   Envelopes KNOX GELATIN  
  3/4  c COLD WATER  
  5   EGGS, separated  
  1 1/2  c SUGAR, divided  
  24  oz CREAM CHEESE, softened  
  3  tb COCOA POWDER  
  1/3  c BAILEY'S IRISH CREAM  
  1  pt WHIPPING CREAM, whipped

I have been making this recipe since i found it about 4 yrs ago. It is the best cheesecake i have ever made and my dad absolutely loves it, he makes me make one every Thanksgiving and Christmas so this year instead of a cake for his birthday I am making one for him. Thank you so much for this wonderful cheesecake recipe.

Here are the instructions. I have made this cheesecake for a number of years and it is always the hit of the dinner.

Instructions 1. For crust: Mix top three ingredients and pat into bottom of springform pan then bake at 350 for 10 mins. 2. Soften gelatin in small saucepan with 3/4 cup water. Stir egg yolks into 1 cup sugar. Add to gelatin mixture and cook over med. heat. stirring constantly until mixture thickens and bubbles. Cool. Beat cheese in large bowl until light and fluffy. Add cocoa and beat again. Add Bailey's and beat some more. Slowly add gelatin mixture an blend well. Beat egg whites until soft peaks form. Add remaining 1/2 cup sugar and continue beating until stiff peaks form. Fold into cheese mixture. Whip cream and fold into cheese mixture. Pour into crust and refrigerated several hours or overnight.
