I think this chili recipe is great. Chili is no longer a side dish, it is a full meal. Thats how my Grandma and Mother have always served it to since i was born in TEXAS. Don't listen to these jurassic chili cooks holding on. Enjoy like generations of my Texas family has for years.

maybe "austin" isn't reffering to texas but to a person

I am from San Antonio the first place chili as a food group (LOL) started in the us in around the year 1731 it was suppose to have come from Spain from a recipe a Nun wrote down after comming out of a trance. I'm not makin this up. Her recipe had tomatoes but no beans. It also had no beef only venison or antelope meat. The famous Frank Tolbert of Dallas said and aggree "If you know beans about chili you know there are no beans in chile". He also said no tomatoes but i've come to like it that way. The earlies Texas chili had no beans or tomatoes it also was made with suet which is mostly fat. This Texas chile was also called BRICK Chili. It's great but will clog your heart. I have tried the above recipe w/o the beans and it's ok but calling it Austin chili is insulting. But look at all the attention it got this rather bland recipe. (LOL)

Im not being mean, maybe Dave should have used more tact in his review, and Im quite sure your chili is great tasting, however....Dave is right. According to chilituers Texas variety chili should not have beans in it, but as a side dish, so calling it austin chili, is probably a little insulting to a true texas chili fan. Im just trying to clarify without insulting. Matt

NOT!!!! ANY Chili recipe calling for 'ranch beans' (what the hell are ranch beans, anyway? Do you mean Ranch Style, the brand name canned beans?) will get you severely derided in Texas. Tomatoes are also not part of genuine Texas Chili, but have *almost* become acceptable here. I see WAY too many recipes on the Web called 'Texas Chili' or some derivative thereof, which are so inauthentic and just plain WRONG! CUT IT OUT!!!! Dave Hughes Austin, Texas
