Apricot Pineapple Salad Recipe

Ingredients
  2  packages (3 ounces each) apricot gelatin  
  2  cups hot water  
  2  cups cold water  
  1  can crushed pineapple  
  2   bananas, sliced  
  2  cups miniature marshmallows  
  Topping:  
  1/2  cup pineapple juice  
  1   egg  
  8  ounce package cream cheese, cubed  
  3/4  cup sugar  
  2  tablespoons flour  
  1  package whipped topping mix (ie Dream Whip)  
  1  can coconut flakes  
 
Instructions
 
  1. Mix gelatin and water; let thicken slightly. Add remaining ingredients and chill until firm.

 
  2. For topping, mix sugar, flour, egg and pineapple juice and cook until thick. Add cream cheese; stir smooth. Let cool. Mix whipped topping as directed; fold in. Spread on gelatin. Sprinkle coconut on top and chill.
