Ants Climbing a Tree Recipe

Ants Climbing a Tree, also known as Ants Climb Tree or Ants Climbing Up a Tree, etc., is a classic Scezhwan dish in Chinese cuisine. It consists of ground meat cooked in a sauce and poured over bean thread noodles. It is so called because the bits of ground meat clinging to the noodles evoke an image of ants walking on twigs.
 
Ingredients
  1   1/2 pound ground pork  
  1   Marinade:  
  1   1 tablespoon light soy sauce or Kikkoman  
  1   1 tablespoon sugar  
  1   1 teaspoon sesame oil  
  1   1 small red chili, seeded and chopped  
  1   1/2 teaspoon chili sauce  
  1   or�  
  1   1 tablespoon chili sauce  
  1   2 slices ginger, finely chopped  
  1   2 green onions, chopped, green and white sections  
  1   4 ounces transparent bean thread noodles (also known also vermicelli  
  1   or glass noodles)  
  1   1/4 cup water  
  1   Oil for stir-frying  
 
Instructions
 
  1. Combine the marinade ingredients and marinate the ground pork for about 10 minutes.

 
  2. Without removing the string wrapping around the transparent noodles, soak in hot water until they are pliable (about 5 minutes). Drain well.

 
  3. Cut the noodles into shorter lengths and then remove the string wrapping.

 
  4. Chop up the chili (if using), ginger and green onions.

 
  5. Hot wok and add oil. Add the chili and ginger. Add the marinated pork.
