Combine butter, cream, nutmeg, salt and pepper in skillet. Bring to boil; reduce heat and simmer 4 minutes. Toss with cheese and cooked pasta.

| Fettucine Alfredo is named for the restaurant in Rome where it was first made. It is, nevertheless, more famous in the U.S. than it is in Italy. One can make a lower calorie version by using less butter, and, half and half (½ milk, ½ cream), or even a larger ratio of milk to cream, and then boiling it down to the right degree of thickness. Surprisingly, less fat does not significantly affect the taste in my opinion.
(I don't know if commenting on other peoples reviews is permitted but as South Africa converted to metric only relatively recently, either of Sal Crit's parents could have told him how to convert to avoirdupois or, anyone there over thirty.) |

Here are the metric measurements for the Alfredo recipe: 60 g butter, 250 ml heavy cream, a pinch of nutmeg, 2.5 g salt, 2.5 g pepper, 90 g grated Parmesan cheese, and 454 g cooked fettucine. |

| I've made many pasta sauces and was desperate to attempt Alfredo. I am 16 years old and enrolled at cookery classes. I am currently a citizen of South Africa living in Cape Town. I looked all over the web to find a simple recipe for Alfredo. Excitement overwhelmed me when I saw this recipe because it looked so simple to prepare. In the recipes which I had reviewed before, the pasta had to be turned clockwise on a stove and I don't even have a stove. I have a convection microwave and a health griller. I wanted to make a lovely meal for my family because I am leaving for Stellenbosch tomorrow, yes, I know it's late to start looking now but I don't have much time. I was EXTREMELY dissapointed to find none of the measurements in kg, g, ml or l!! I feel almost cheated in a way because one needs to cater for the rest of the world too - I don't only concentrate on my needs, I have a family who also needs care and looking after so my only response to this page is that I never had the opportunity of experiencing the easiest pasta to make as I work on a different system. I won't beg, but ask please, cater for everyone's needs and you might find it is well worth your while!! |
