Too good to lose! Recipe is equally good as cupcakes, muffins or in a loaf pan as bread. Awesome with creamy chocolate frosting.
Ingredients

2 1/2 C all-purpose flour

1 tbsp baking soda
1
1 pinch salt
1
1/2 C unsalted butter or margarine
1
1 C granulated sugar
1
3/4 C light brown sugar
1
2 eggs
1
1 tsp vanilla
1
4 ripe bananas (two cups mashed)
1
2/3 C buttermilk
1
1/2 C chopped walnuts
1
Substitute: If you don't have buttermilk, add 1 tbsp lemon juice to 1 cup whole milk, allow to sit 5 mins.
Instructions

1. Preheat oven to 350 degrees F. Grease and flour two 8 inch round cake pans. In a small bowl, whisk together flour, soda, and salt; set aside.

2. In a large bowl, cream butter, granulated and brown sugar until light and fluffy. Beat in eggs, one at a time. Add vanilla, mix in the bananas. Add flour mixture alternately with the buttermilk to the creamed mixture. Stir in the chopped walnuts. Pour batter into the prepared pans.

3. Bake in the preheated oven for 30 mins. Cake is done when toothpick inserted in middle comes out clean. Remove from oven, and place on a damp tea towel to cool.

This is the banana bread recipe I have been searching for all my life! It is a perfectly moist loaf that is excellent with chocolate chips. I pureed the bananas to take out the lumps and the result was perfect banana bread.
