A M Delight Muffins Recipe

This is a wonderful healthy recipe for kids. It contains lots of nutritious ingredients like apple, carrots and dried fruits that are very high in fibre. So enjoy these easy to make but healthy Muffins.
 
Ingredients
  1   2 c All-purpose flour  
  1   3/4 c Sugar  
  1   2 ts Baking Soda  
  1   1 1/2 ts Ground Cinnamon  
  1   1/2 ts Salt  
  1   3 Eggs  
  1   1/2 c Vegetable Oil  
  1   1/2 c Milk  
  1   1 1/2 ts Vanilla Extract  
  1   2 c Peeled Apples; chopped  
  1   2 c Carrots; grated  
  1   1/2 c Flaked Coconut  
  1   1/2 c Raisins  
  1   1/2 c Sliced almonds  
 
Instructions
 
  1. In a large bowl, combine flour, sugar, baking soda, cinnamon and salt.

 
  2. In another bowl, beat eggs; add oil, milk and vanilla, mix well; stir into dry ingredients just until moistened.

 
  3. Fold in the remaining ingredients. Fill greased of paper lined muffing cups three-fourths full.

 
  4. Bake at 375 degrees for 20-25 minutes or until muffins test done.
