This elegant, yet simple to prepare, Pistachio Smoked Salmon Spread  is perfect for a quiet evening with your family or entertaining guests.

This recipe will make approximately 1 to 1 1/3 cups and can serve up  to six people.

About the ingredients
Salmon
is a healthy diet choice for a change from red meats. Salmon is known as a good source of Omega-3 fatty acids (polyunsaturated fatty acids) that has been in the health news so frequently. Polyunsaturated fatty acids are known as the "good" type of fat to help reduce heart disease and aid in the care of inflammatory disease.

Pistachios, in their creamy colored, split shell with a green kernel, are one of the favored nuts and have been used for food since around 7,000 B.C. Pistachio nuts are rich in oil and although the color of the kernel may vary from a yellow color to different shades of green, kernels with a deeper shade of green are more valued.

Although pistachios are native to western Asia and Asia Minor and distantly associated with the cashew, they became known in the United States in the 1850's when seed was distributed in California and a few other warm climate states. Because pistachios grow best in areas that have winters cool enough to break the dormant bud period  and long hot summers, are drought resistant and very tolerant of high summer temperatures, they do especially well in California's San Joaquin Valley where pistachios are an important commercial product.

Ingredients:

3

oz Smoked Salmon, flaked or finely chopped
1 package Cream Cheese, softened (8oz)
1/4 cup Chopped Pistachios
3 tsp Lemon Juice

Preparation:
1. Beat softened cream cheese with a wire whisk or an electric blender until fluffy

2. Add smoked salmon, pistachios, and lemon juice

3. Mix all ingredients thoroughly

4. Serve immediately or chill before serving

Presentation
Serve with rounds of bread, crackers or croissants
