Sprouts have increased in popularity mostly because of their great taste and crispy crunch. A sprout is actually a tiny plant that is very easy to digest. Since these delicate sprouts have a high water content, they will fill you up fast, but with few calories-only 10 calories per cup serving.

Selection & Storage
Look for fresh, tender, yet crisp sprouts. Many stores offer sprouts still in their growing trays to ensure freshness. Avoid soggy, limp sprouts. Store in a plastic bag up to 4 days.

Preparation
Sprouts need to be washed just before use. They can be lightly rinsed and pat dried. Sprouts make a superb crunchy addition to salads or replace lettuce in sandwiches

Alfalfa Sprout Sandwich
INGREDIENTS
  • 1 cup alfalfa sprouts
  • 1 cup carrots, shredded
  • 1 cup chicken, skinned, boned, cooked and diced
  • 1 cup tomatoes, diced
  • 1 cup green peppers, diced
  • 1 cup lettuce, shredded
  • ¼ cup low-fat mayonaise
  • 6 pita rounds, medium size

    Serves 6
PREPARATION
Place all the ingredients except pita rounds in a bowl; toss. Cut each pita in half and fill halves with mixture.
