Serves 8
Prep time: 10 minutes
Cook time: 10 minutes

Ingredients:

1 pound penne pasta
1 head broccoli, cut into florets
1 red bell pepper, julienned
1 (6.5 ounce) jar marinated artichoke hearts
1/4 cup grated Parmesan cheese
salt and pepper to taste


1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 minutes. Add broccoli and cook 2 minutes more. Drain pasta and broccoli and rinse with cold water until cool.

2. In large bowl, combine pasta, broccoli, red bell pepper, the artichoke hearts with their marinade, Parmesan, salt and pepper. Toss, adjust seasoning and serve.

Macaroni Salad

• 2 cups dry elbow macaroni, cooked, rinsed, and drained
• 1/3 cup diced celery
• 1/4 cup minced red onion, soaked in cold water for 5 minutes, drained
• 1 tablespoon minced flat-leaf parsley
• 1 teaspoon of dried dill (optional)
• 1/2 cup diced vine-ripened tomato (optional)
• 1/2 cup prepared mayonnaise
• 3/4 teaspoon dry mustard
• 1 1/2 teaspoons sugar
• 1 1/2 tablespoons cider vinegar
• 3 tablespoons sour cream
• 1/2 teaspoon kosher salt, plus more to taste
• Freshly ground black pepper
Directions
In a large bowl combine the macaroni, celery, onion, parsley and tomato, if using. In a small bowl, whisk together the mayonnaise, mustard, sugar, vinegar, sour cream and salt. Pour the dressing over the salad and stir to combine. Season with salt and pepper to taste. Serve. Store covered in the refrigerator, for up to 3 days.

I really love this site! A lot of veggie recipe is in here!!! and I can mix it with some spice... its ok if I gain some weight this week just for this kind of foods!!! really healthy...

Very refreshing receipe a perfect dish for this spring season when these fresh vegetables are easily available... Yummy and healthy sharing must say!!

Indeed! you are right it is really refreshing! I love to eat and I love more to eat when its vege! I really love eating vege and fruits and any vege recipe I keep them and try them!
