Crustless Brownie Pie (From My Great Recipes)



Delicious and easy, this pie is a joy to make when company calls to say they are coming in unexpectedly. And it keeps well for several days wrapped in foil.

Ingredients

1/2 cup butter

1 cup sugar

1/4 cup cocoa

1/2 cup all-purpose flour, plus 1 teaspoon all-purpose flour,

reserved for nuts

2 large eggs, room temp

1 teaspoon vanilla

1/8 teaspoon salt

3/4 cup pecans

3/4 cup walnuts, sliced into pieces

Directions

In large mixing bowl, beat all ingredients except sliced nuts at medium speed for 4 minutes.

Sprinkle reserved 1 tspn flour on sliced nuts.

Stir in nuts.

Spread in buttered 9-inch pan.

Bake at 325 for 35 to 40 minutes until pick ed near center comes out clean. Cool.

Good served with very slightly sweetened whipped cream, whipped toppinga dollop of vanilla ice cream.



Fudge-Topped Triple Chocolate Brownies


Two bitesone, you decide! These are what you need for that chocolate fix! These is not rich at all like they sound. They are so moist and delicious, these little delectables, you wouldnt believe how easy they are to make! If you dont want to make the entire 96 ) (I have 2 24 mini muffin pans and did two rounds), so you can freeze the dough! The fudge topping is for all brownies, I never ran out. Hope you like these as much as I do, Enjoy =)

Ingredients

1 cup butter

1 cup baking cocoa

4 eggs

1 cup brown sugar

1 cup sugar

1 1/2 cups flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon salt

1 teaspoon vanilla

1 cup pecans

2 cups milk chocolate chips ( Hershey)

1 cup semi-sweet chocolate chips ( Hershey) prepared topping

1 1/2 cups sweetened condensed milk ( not evaporated milk) 2 cups milk chocolate chips ( Hershey)

1 cup semi-sweet chocolate chips (Dark Hershey)

Directions

Preheat oven 400°F.

In a saucepan on medium high heat, melt butter. Remove from the heat and stir in cocoa. Set aside to cool.

In a medium bowl, beat eggs, vanilla and sugars. Combine flour, baking soda/powder and salt in a separate bowl then gradually add to egg mixture. Stir in the cooled chocolate mixture mix well.

Directions

Place a teaspoon each in a greased 24 mini muffin tin. Bake for 8 minutes. Cool for 5 minutes and pop out with a toothpick.

In a small sauce pan on medium heat, Blend sweetened condensed milk and chocolate chips until chocolate is melted. Turn to heat minimum. With butter knife spread fudge on brownies and chill for an hour.

Makes 96 brownies =).
